It comes from the top of the shoulder and is sometimes called a top blade, top boneless chuck or petite steak. Its used in steak frites in restaurants, and its sometimes hard to find at a standard grocer. When trimmed out by a good butcher, a tough, sinewy membrane down its center is removed to leave a perfect steak for the grill.

I like making them the centerpiece of my meal, but Ive been wanting to try something different to accompany the steaksno potatoes, no rice. I like polenta, but Ive done the sliced polenta sauté ad nauseam. So what type of cut is it? The steak comes from the chuck primal of the cow. This area is known for flavor, however it is also known to be tough if not cooked right.

It’s a relatively new steak. The steak is cut from the top blade roast, which has a tough, gristly member that runs in it, which is not desirable. A joint project by the Universities of Nebraska and Florida, found a way to cut the top blade roast to remove this gristly member, offering a steak that would be cheaper than some of the high end options.

The top blade was never considered valuable beyond grinding up as ground chuck, so this new way to cut it up was a game changer.

Since flat iron steak is not as well known as flank steak, it is easy to confuse the two. However, they are very different cuts of meat, beginning with the part of the cow from which they come. Whereas the flat iron steak is cut from the chuck primalthe shoulder area of the cowa flank steak is cut from the belly muscle, called the flank primal. They are both flavorful and tender, but the flank steak is leaner than the flat iron.
